Wild rice with stir fried peppers
Gluten free wild rice with stir fried peppers recipe, enjoy !
100g Wild rice
1 Green Pepper
1 Yellow or Orange Pepper
1 Red Pepper
1 Small red Onion
Two handfuls of ready cooked king prawns
1 Vegetable gluten free stock cube.
1 Tbs of Extra Virgin Olive Oil.
Preparation
Rinse the Wild Rice
Dice up all the peppers and onion.
Melt the Gluten free stock cube in some hot water until fully liquidised.
How to Cook
Add your rinsed rice to a suitable sauce pan.
Add the the stock water to the mixture and add extra water ensuring that the water covers the Wild Rice.
Cover the Wild rice and bring to boil using a high heat level.
Once the rice has reached boiling point, reduce the heat and leave to cook.
Wild rice is tough and can take up to an hour to cook.
Tip: If you have a pressure cooker, this is a great way to cook wild rice quickly.
This method can take as little as 15 to 20 minutes.
You may also need to add more water as required.
While the rice is cooking put all your diced peppers and onion into a frying pan with the olive oil.
Stir fry slightly for 5 to 10 ten minutes until the vegetables are slightly soft.
Stir in the king prawns.
Remove from the heat right away and leave to stand and cool.
Once the wild rice has finished cooking pour the freshly stir fried peppers, onion and king prawns to the wild rice and mix together.
Your meal is cooked and ready to eat.
