Gluten Free Raspberry Muffins

A lovely snack recipe of gluten free raspberry muffins which are great with a cup of tea. lovely jubbly!



  • 200g gluten free self-raising flour.

  • 100g soft brown sugar.

  • 125g raspberries (defrosted frozen ones are perfect for this, or compote would work too)

  • 75g natural yoghurt.

  • 100ml rapeseed, or sunflower oil.

  • 2 eggs.

  • 3 tbsp desiccated coconut, or a handful of white chocolate chips, to top.


 


  1. In a large bowl, mix together eggs, oil, yoghurt and raspberries.

  2. Add flour and sugar and combine to a smooth batter.

  3. Spoon mixture into 6 muffin cases.

  4. Sprinkle each with coconut, or chocolate chips.


Cooking

Bake at 170 degrees celsius for 20 mins.
