Gluten and Wheat Free Pancakes

Delicious gluten and wheat free pancakes.  Don’t just wait until pancake day to enjoy.  Suitable any day and any time of the year.


 

3 eggs
375ml milk
380g gluten-free plain flour
1 tbsp olive oil

1) Blend the first 3 ingredients together with 375ml of water using an electric whisk. Heat a non-stick frying pan and add the oil, swirling it round to coat the entire surface.

2) Pour enough mixture to coat the base of the pan and swirl in a circular motion so the batter is even. Cook for about 2 minutes or until the bottom is light brown and flip over to cook the other side.

3) Sprinkle sugar or syrup or drizzle with lemon and enjoy.

Also make it dairy free by making it with soya, coconut or almond milk.
