Gluten Free Fruit Scones
Gluten free fruit scones, delicious and ideal for snacks and with tea !
(makes 6)
200g Gluten Free Flour Mix
1tsp Gluten Free Baking Powder
50g Butter
100g Caster Sugar
150g Raisins (or dried fruit of choice)
1tsp Mixed Spice
1 Egg
75ml Milk
Pre-heat oven to 200 c (Fan)
Place the flour, baking powder and butter into a bowl and rub together until it resembles breadcrumbs.
Stir in the sugar, mixed spice and fruit.
Beat together the egg and milk. Add this gradually to the mixture (wont use all of it) to form a soft dough.
Roll out the dough on a flour dusted surface (approx 1 inch thick) and cut of the scones.
Place on a lightly greased baking tray and brush with the remaining egg and milk mixture.
Bake for around 12 minutes until golden brown.
