Gluten Free Fruit Cake

Gluten free cake, nice with a cup of tea !

 

1kg dried mixed fruit 500ml fruit juice or cold organic tea of choice 350g gluten-free self-raising flour


Preheat the oven to 125°C/gas mark ½. Soak fruits in juice/tea overnight. Stir flour into soaked fruit and mix well. Spoon mixture into a 22cm lined cake tin. Bake for 2 – 2½ hours in the bottom of your oven or until cooked through. Remove and leave to cool. Place in an airtight container or wrap in kitchen foil.
