Gluten Free Chocolate Fondants

6 ounces dark chocolate at least 70 per cent cocoa solids 3 ounces rice flour (Dove's farm is good) 4 eggs 7 ounces caster sugar 6 ounces butter 1 ounce melted butter for greasing moulds Cocoa powder (NOT drinking chocolate!)
1) First melt the 1 ounce of butter, then grease each pudding basin or ramekin with the melted butter. Coat them well using a pastry brush using upward strokes. Put into fridge for 10 minutes so that the butter sets. Take out of the fridge and grease again with melted butter and dust well with the cocoa powder, shaking out any excess. Put to one side. 2) Put remaining butter into a heat proof basin and break in the chocolate. Put basin over a pan of just simmering water. Make sure the bottom of the bowl does not touch the water. Allow chocolate and butter to melt together. Once melted remove the basin from the heat and stir gently. Put to one side. 3) Beat the eggs and the sugar together in a large bowl until they are light and fluffy. 4) Fold the chocolate carefully into the egg mixture with a metal spoon or spatula. At this point, if you wish, you can add 2 fluid ounces of something grown up and naughty such as Rum, Cointreau, Amarretto, Brandy or black coffee(not so naughty!) 5)Then fold in the flour to the mix. 6) Divide the mix evenly between the pudding basins. 7) Place on a baking tray and bake in a PREHEATED oven (very important) at Gas 6/ 200C/400F for EXACTLY 12 minutes..no less, no more ! They need to look puffed up and crusty on top but still a little wobbly underneath. 8) Turn out onto serving plates with a good dollop of vanilla ice cream and enjoy ! You can keep the fondants in the fridge until ready to bake later as above. They also freeze well uncooked. If you cook from frozen they will need 15 minutes cooking time. I find the results are more reliable if you let them defrost and then cook for 12 minutes as above.
