Gluten Free Carbonara
350g packet gluten-free spaghetti
5 rashers rindless bacon, diced
2 eggs, lightly beaten
100g parmesan cheese, shaved
Bring a medium saucepan of water to the boil. Add the spaghetti and boil according to manufacturer's instructions.
While the spaghetti is boiling, lightly fry the bacon strips in a non-stick frying pan. Once the spaghetti is cooked, drain (do not rinse) and add the beaten eggs immediately, stirring through the hot pasta.
Add the bacon and cheese and toss to combine. Serve immediately.
Variation: Fry the bacon with a little garlic too.
