Gluten Free American Style Chewy Cookies

I don’t often eat sweet things as I have an intolerance to sugar. However as its’s Christmas, you simply can’t get away from sugar and spice and all things nice.
So along with my ritual of making my own mince pies, christmas chocolate cake and ginger bread biscuits, I have also decided to make some gluten free christmas cookies as well. Before I got diagnosed with coeliac, I used to adore supermarket baked american style cookies. With that soft gooey center, I could never resist. I especially liked the white chocolate ones. So my aim was to find a gluten free recipe and make my own version. I searched the web for free from recipes and found lots of different types. Most though included some sort of nuts and as I’m not keen on nuts I knew I was going to have to improvise.
When I’m cooking, there’s nothing better than trying new things and making recipes my own. So with my favourite Michael Buble christmas CD on in the background, I took to baking my very own american style christmas cookies.

For me there is nothing more therapeutic than Sunday afternoons in the kitchen preparing some sort of gluten free goodness. As the kitchen filled with the aroma of the ingredients blending together, I couldn’t help but smile and get excited about Christmas coming. I found myself staring at the christmas tree, and as the lights flickered on and off, I found myself totally lost in the moment. It’s funny how christmas puts you in a totally different frame of mind. All stresses and strains can disappear as you become full of joy at this special time of the year.

For my first attempt at this gluten free cookie version, I choose a pretty simple recipe to make and it really didn’t take much time to prepare or bake. As I was adapting a none gluten free recipe, I simply replaced the flour with gluten free plain flour and the chocolate chips with a freefrom version. I couldn’t decide if to use milk or white chocolate chips, so I use both. Indulgent but hey…. it’s Christmas! ![]()

As I folded the mix, I couldn’t help but get excited at trying the end result and like the big kid I am, I dipped my little finger into the mixture and tasted a little bit. MMmmmm!! If I do say so myself, it tasted good. I dolloped the cookie mixture on to the baking tray in chunky round circles.

My face was aching so much as I continued to smile whilst humming jingle bells out loud. I’m like a big kid and I love christmas. I couldn’t wait to taste the end result but most of all, I couldn’t wait to share my creation with my family and friends. :-)
